Uses=Graphite is used in pencil leads and as a lubricant in machine. Diamonds are used in jewelery. Diamonds are also used to cut diamonds.
Structure=Graphite is made of carbon hexane rings. Whereas diamonds are also made up of carbon atom. But they are strongly bonded to each other with covalent bonds.
Ice is less denser than water because of it's cage like structure.

Graphite and diamond, both are made of carbon. Conversion: Graphite can be transformed into diamond by applying a pressure greater than 1,00,000 times the atmospheric pressure at the sea level and by burning at a temperature of about 3,700°C. These conditions of temperature and pressure help in rearranging the atoms of carbon in graphite into a diamond structure.

But as for your ice question, Ice is less dense than water because of the hydrgen bonds between the water molecules. As the temperature drops, the hydrogen bonds become stronger, and, unusually, slightly longer.
Therefore, when the temperature drops, the water molecules grow further apart, and so the same mass of water becomes less dense.

Graphite: used in pencil lead, used in plastics to form metalics (i.e. graphite framed bicycles). It's bonding is flexible, but not elastic. It's composition is flaky
