My wife wants to make his and her aprons. How do we make them ? Any patterns ? Should they be long that cross the back or just the waist type ?

Walmart has a pattern for his & her aprons for two dollars and some odd cents. They are the full front aprons that will protect your clothing well, and they are easy to make. :)
