I had a friend who went from Civil Engineering to English with a minor in Political Science. I have also seen someone drop out of their semester to getting a Ph.D. in Microbiology to go to Law School.

My husband was studying opera (vocal performance) at a conservatory, which was part of a larger university. After two years, he realised that both the university and the major were wrong for him. He wanted to transfer to a theater program at a different school. But if he tried to transfer from opera (BFA) directly to this new school's theater program (BA), they wouldn't accept most of his credits because of the conservatory-bent to his current program. He'd basically have been busted back to Freshman.
Luckily, he was on good terms with his academic advisor. Together, they realised that if he was currently a non-BFA student who wasn't majoring in the arts, he could transfer whatever credits he had. Problem was, he wasn't.
So they changed his major, just for the end of the semester, from BFA-Vocal Performance to BA-Business, simply so he could complete the application. He'd then need to apply to the new university as a Business major, but he could easily switch his major to theater once he got there.
Sure enough, the new university accepted him as a business major. As soon as he enrolled, he changed his major to theater. Because they accepted all his credits, he only had a few specific courses to make up, rather than having to actually redo two years' worth of credits.
So, opera to business to business to theater, all without ever taking a single business course.
