Black absorbs light. By putting it under their eyes it helps reduce the glare from stadium lights or the sun. In football, you'll notice that it is normally worn by the receivers and sometimes the quarterback. The last thing you want when you are a receiver is to look up to catch the ball and the glare of the sun or lights interferes with you being able to see and catch the ball.
It's also done a lot in baseball so that the outfielders can see to catch the ball better.
