Take 5 south to Portland and take 84 down the lovely Columbia River Gorge all the way to Salt Lake. Pick up 80 there and take it east across Wyoming. Turn on 25 south to Denver. Takes about 20-24 hours drive time.
If you have time and want to make it more scenic, take 15 from SLC down to 70 and take that right through the middle of the Colorado mountains.
Good luck!
