there are a couple of ways of doing it
1. use live sound- this is when you shoot and the original sound during the shoot and is only enhanced a bit. You have to have total control of the area huge sound stage. or when you do a documentary like National Geo.
2. shoot the movie and add the actors dialogs later on. This is done in the "Dubbing Room". While the actors are watching the scene, they are reading the script and doing the whole dialog all over again.
In both cases, live sound is recorded this is what we call ambient sound.
Ambient sound is very important in making the movies sound real. this will make the scene transitions more distinct.
Instead of just using a Foley studio, I like using an original ambient sound track.
Before, when making the sound track of the movies, the whole orchestra is watching the scene while the conductor / maestro directs the orchestra and play the music in sync with the scene.
Hope this helps

Dubbing is someone doing the voice of the actor/actress in the studio after the movie is shoot. You can see dubbing in a lot of the old martial arts movies. They dubbed the in to English from Chinese. The words do not match mouth movement. With DVDs there is less dubbing today because you can turn on subtitles or pick the language you want to here.

Some but not all it depends on what station and its market viewers, like ABS CBN channel 2 used to dubbed 24 in tagalog but in their sister channel 23 its not, usually programs there are are in English. I don't remember a movie that is been dubbed as Tagalog cause its ugly and besides even we are not fluent in English we can understand it so why bother. But japanese, korean, chinese we do especially it is been watched by kids. But if you notice most teenagers know few words or phrases in japanese because of watching anime dvd's that has a subtitle in English.

RE:
what is dubbing in movies and how it is done?
I have doubt , aren't the dialogues recorded while shooting ? do all the people who are on the screen have to go to studio for recording dialogues again?
how it works , curious to know bout that..

dubbing is when the producers or distributors of the movies wish to have the film in another language. it is done in studios using actors speaking in the chosen language. as an example, Antonio Banderas did the spanish dubbing for the film he has worked in where the original language is english.

thats simply where other people get the dialogue sheet and express their views as they did in screen. dubbing is where the actual artist does not give the voice. some one else whose voice suits the character does it. Usually ther are done in studion and tthe talk of artists during the shooting is not recorded
