there's a floor rigidity on water. The water molecules attracts the different water molecules. The round style is the most sturdy style. it is going to style a rain drop structure because of gravity and the forces of air appearing on the drop. In area, the drops are almost round.

Basically what you're dealing with is the water 'adhering' to the faucet and 'cohering' to itself until it becomes heavier than the adherence can bear (that is, the downward force of gravity is greater than the force of the adhesion).

it forms a sphere due to surface tension. The molecular forces pull all themolecules together into an efficient shape or volume--the sphere. When enough molecules have accumulated, gravity comes into play acting upon the whole system and pulls it down.

it doesnt come out of the faucet all at once, but slowly. so once it is too heavy the water breaks free and it drops.
