Yes it's very nice.
I've always loved the name Sarah. It is simple and nice.
Elizabeth is also a nice traditional name, and has some interesting contractions such as Beth, Liz, Liza, and Lizzy. So your child can, if bored, use a variety of contractions of their middle name.
So it sounds like you have not only given them a nice name, but also various options for interesting contractions and nick names too.

Sarah Elizabeth was my grandmothers name and I've always loved it!!! She always went by "Lib" instead. She said she hated being called Sarah, but perhaps that was just her old age.
I say GO FOR IT!! I have 4 boys and only wish I could've named one after the woman who taught me how to make a great pie crust.

I like it, but instead of elizabeth just make the middle name beth. I think it would sound better.
