I keep reading posts that say this or that falls into the 'emo' category.. what the heck is emo?!?!

It's short for emotional. It is the modern day punk rock/alternative.

it stands for emotional hardcore.
its a genre of music that came from hardcore punk, back in the 80s.
and quickly died off..
but gave birth to screamo, and influenced a bunch of indie bands
but now, the term is used to describe anything, because people think it stands for just emotional. and think anything thats depressing (which emotional doesnt stand for) is emo.

emo is a boy who dresses like a girl and dies his hair black and cries all the time about the world and how it's all going to heck, and we might as well just kill ourselves anyways.
