Chances are that it would turn a grayish color since that is the color most people people die, and the blood drains from their faces. Kind of morbid, I know, but you asked about strangling a smurf, so....

Eventually they would go grey, the blue colour represents the life of the smurf and hence when dead they would loose their colour
