Your question is really too vague, UDP or TCP? What connection oriented protocol? What are you attempting to do? What application is going to decrypt the packets on the receiving end? What kind of encryption scheme?....

These are just some of the questions, that would need to be answered, to give you any type of applicable answer.

One of the more common forms of packet encryption is Virtual Private Networking.
