first of all its not ethical to mate two people to experiment with eye colour or something like that
and even if it was ethical, its not practical because humans have such a long gestation period...nine months to get your offspring, and usually only get one...to be able to have statistically significant data you want a LARGE number of offspring, more than humans can have and even if we could itd take way too long
thats why we use mice, or plants because its fast and there are large amounts of data available, then we just apply those results to humans

You're not going to cross people with a homozygous recessive individual just to see what their genotype is.

"Jane, we don't know what your genotype is, so we'd like to introduce you to James (he's homozygous recessive for the trait in question). You two get busy and have a few offspring so we can figure out your genotype."

It's just not the same ethical situation as with peas!

Think of the ethics involved; producing illegitimate children just to see if their parents are hetero- or homoxygous. It's terrible and immoral.
