Odor testing must have standards set up. Or you can use a GC to measure a specific substance that gives the liquid a odor (ie methanol or 2-ethyl hex) and set up acceptable ppm levels.

Color can be measured by various scales (Gardner, Hazen ASTM D1500, Saybolt and Lovibond are most common). There are various automated devices that can be purchased ($2000+) that will give you color scales, or color wheel type manual devices can be purchased through fisher scientific catalogue.
