There are standards answers to that one.
I am looking for a new challenge etc. Try and answer so that you are looking for something posative that you can give the company as well.
e.g. I have now got to the point in my career that I wish to use the x skills that I have learnt within a different environment. I investigated your company and decided that you could use my skills and allow me to develop them further.
Do NOT
1) be a suck up
2) say bad things about your current company
3) come over as bored, argumentative or a trouble maker

Well, if you haven't been at your current job for long this is a tough question to answer.
If you have been there for a while (1.5 year+) Say: "The company has a hierarchy that makes it difficult to advance career-wise and you don't feel that you are given a chance for growth".
You don't want to come of complaining.
It's worked for me.

Don't ever bad-mouth your former employers--new employers do not like this (and may think you'll do the same to them).

Well this company looks like it is going in the right direction, plus I think not only would I be good at it, but I think I will enjoy my work here.
Honestly just be yourself, it is not as much as the "RIGHT" answer as much as how you carry yourself.
