The Philippines was actually named 'Las Islas Filipinas' by Ruy Lopez de Villalobos after King Philip II of Spain because the Spaniards conquered the Philippines. In our mother tongue, our country's name is Pilipinas whereas Philippines is just the country's english name.
As to why we're called Filipinos instead of 'Philipinos', originally a person from the Philippines was called 'Pilipino' in general and 'Pilipina' for a lady in particular. This was the case when the Philippines still used the old Pilipino alphabet where there's no 'F' in the alphabet. But eversince we started using a new Philippine alphabet system which included some of the English letters such as 'F, V, W,' and a lot more, Philippine people in general were already called 'Filipinos' and 'Filipinas' for ladies in particular.

Because Spanish sponsored explorers colonized the country in the 14th century and named it Las Islas Filipinas. Henceforth, the people of this country became known to the rest of the world as Filipinos/as. But the Americans colonized the country after WW1 and Anglicized the name to Philippine Islands. Philip for Felipe. In English, you would use Philippine to describe anything that originates from the country except for the people. Some do depending on their language. Philippinians is a mouthful, don't you think? Philippinos would not sound correct either. (Intricacies of a mixed language) Anyway, I am not a language expert. A lot of people are confused with this and so are a number of Filipinos. You might have met some Filipino people who say Pilipino (P instead of F). The Philippine alphabet did not originally include 'F' in the alphabet. So in the country, the people say Pilipino and the country is Pilipinas. So in English, we say Philippines for the country and the people Filipinos/as.

The country was named Las Islas Filipinas by Ruy Lopez de Villalobos in honor to the heir to the Spanish throne, Philip II. Thus, the local is called a "Filipina" if female, and "Filipino" if male.
When the Americans came, they anglicized the spelling from Filipinas to Philippines and the spelling remained as such, but the locals are still called Filipinos until now.

If you can answer why people in Denmark are called Danish and not Denmarkers or Denmarkish, then you will definitely also answer your question. Would you like to have a more difficult one? Why do you call people in Netherlands DUTCH and not Nethers or Netherlanders?
