I'm not trying to breed them. I read online that pearl gouramis like to be in groups w/ more females than males.

Are you trying to breed them?

I have bread gouramis in the past and 1 male and 1 female work best. When you bread them, you need an aquarium that has no water movement with alot of floating plants, they will then build a bubble next and I believe the fish hatch in 3-5 days at which point you remove the parents because they will eat the baby fish.

The 2nd female fish is just going to interfere with the breeding process.

Generally with gourami you always want more females than males. (As gourami, and betta are prone to wife beating, and more females spreads out the male's attention.) Pearl gourami are pretty peaceful so it really won't matter. Note that they will fight a little the 1st week, but settle down after that.

Both combinations will work fine, 2 females if you are intending to breed.
