I always wash up as I go along cooking. By the time we're done eating, washing up later is a viable option because there is minimal clean-up.
(Uh, we ARE talking about dishes right? If not e-mail me)

Put them to soak in very hot water go back in about 15 Min's and they will be so easy to wash ,
You have to wash them so get them done out of the way then you can relax

Wash up now - the more dishes pile up, the less you'll feel like doing them. Or buy a dishwasher. Or buy ready meals, so you don't have to wash the plates up!!!

Personally I always wash up straight away 'cos its easier to shift whilst its still 'fresh'. If you try and keep on top of the washing up whilst you are cooking, there's not such much to do at the end.
