Nothing. The electricity will flow through the pickle as if it were a wire because the pickle is mostly electrolyte [water with charged ions like sodium and chloride]. Since the pickle is so wet, it isn't likely to burn where the current is applied.
Electricity will flow through you as well for the same reason. However, you are likely to get burnt spots where the current enters and leaves your dry skin and the electric current is likely to interfer with the electricity [see pacemaker] that triggers your heartbeat.

Electrifying a pickle will turn it into a lamp. The sodium ions allow conduction and in their excited state emit light.

It would depend on voltage and amperage

low voltage, nothing happens because of conductivity, Hi voltage and amperage will explode the pickle by boiling it's water content
