Because...to make their pizza dough...the pizza makers there use that fresh, clean water from the East River. (And all the industrial waste, dead fish, and mafia corpses on the bottom give it a unique flavor...)

haha, I agree!

However, people like what they are used to. Not everyone explores new tastes and flavors.

The bland soggy whitebread and cheese that passes for pizza in many rural areas reflects what the bulk of those communities is accepting of.

By the way, I have had some of the WORST pizza in NY and NJ as well.

The very best I had was just outside Queens.
The 2nd best was way upstate, in a little village where the owner was a transplanted New Yorker who knew his pizza. His wife got the place in divorce and it closed. Too bad.

If you look around, I'll bet you can find good pizza in all 50 states, but it isn't easy. But their idea of "NY Style Pizza" usually isn't. You are better off with their local specialties like the Chicago Deep Dish style.

Good pizza requires olive oil on the pan. Down south they'll use corn oil or pig fat for the same purpose. Just will never taste the same.

Um, they're not. All you get from those two states is a pile of grease, a VERY thin crust, and a few toppings. Go to Chicago for the best pizza. There you will get a huge deep dish pizza, tons of toppings (toppings that stay on the pizza and don't fall off because of all the grease) and just the right amount of grease from the cheese and pepperoni's. I swear, I think grease is actually an added INGREDIENT in NY and NJ.

I also agree that the key to a great pizza is the water. Actress Cathy Moriarty has a pizza place in California and she SHIPS the water from New York to make her pizza.

Pizza in the North east , i think of because of the fact often they are kinfolk owned chains that have recipes surpassed down from technology to technology, and characteristic been perfected over the years, and Italians are the suitable chefs. LOL.

I talked to a Pizza maker from New York, he told me it is the water! He said the water in other areas simply does not produce as good of a crust. Interesting!!!

Grew up in NY/NJ

Chicago's Deep dish pizza is the best and only available at 2 restaurants in Chicago

Kickass question! Having grown up in NJ I have to agree; no offense to Chicagoans. Deep-dish pizza is damn tasty, but I've always liked a thinner crust myself. I think it's a combination of what they put in the dough as well as knowing the proportion of cheese to sauce, and not burning the sh*t out of the crust.

I ate most magnificiant pizza on 8th street in my life and probably answer of your question is italians many itallians live here in NYC
