It was Fred, who was indeed a lion. In addition to being Super Chicken's sidekick, he was also Henry Cabot Henhouse III's valet.
From the Super Chicken theme song:

I pity all those people who never got to see George of the Jungle, the funniest cartoon ever made (shamefully made into one of the unfunniest live-action movies ever made).
