Yes, especially fresh water eels which are called unagi. The sea water eels are called anago in Japanese. In Japanese cooking the only the anago is used for making sushi. It is only in america we see the unagi or fresh water eels used for sushi.
I think the best dish is Unagi DOnburi which is the freshwater eel broiled in a sweet teriyaki like sauce served over a large bed of rice.
