Lets assume those arent really deep gouges. OK. Because a gouge very deep requires an epoxy repair and that is a work best done by individuals in the "counter top repair" business. That is by people who install counter tops on kitchen cabinets for a living.

For the homeowner himself/herself. Scratches can easily be taken out of pure ceramic. Even a ceramic sink that is beat up can be repolished by a homeowner with a little elbow grease and abrasive paper a small hard buffing wheel on an electric drill. You dont think for one minute that people in the sink making business scrap a sink with a few scratches on the surfaces. They polish it up and sell it to customers.

1. Go to an Automotive Paint Supply store and get some of the following grits of wet and dry sand paper.
a. 1000 grit
b. 2000 grit
3. 2500 or 3000 grit (if they carry it)
These cost about $1 for an 8x11 sheet You need only 1 sheet each.

2 Take a small piece about 2 inch square of the 1000 grit and using water and paper together, never dry, polish out the scratch. Then repeat the polish with 2000 and follow with the 2500 grit paper polish it out to a mirror like finish if you want to. Careful, dont polish too much or it will outshine the rest of the top. You can then polish even more if you want to using a pumice polisher compound that is called "jewelers rouge" that is also available at supply houses using a cloth or polish wheel and ordinary hand drill with a buffer wheel on it. The drill is not absolutely necessary a cloth works fine.

An ordinary deteroriated kitchen sink can be polished out with 2000/2500 wet dry-water comb and a buff with jewelers rouge to glitter like new.

i have been told if the gouges are really bad you will need to replace the stove top..that's why i don't have one ..you don't say if they are interfering with your cooking or not ..i would say if not just live with it ..if you shake the food in frying pans you might want to stop that habit, or at least lift the pan up..
