Over the years of use, my baking sheets have become coated with black grease. I've tried soaking the pans in hot, soap water and scrubing with a Dobie, but it does not remove any of the baked-on stuff. Is there anything I can do, or should I just replace them?

My cookie sheets are Calphalon, too. An SOS pad will pull up the nonstick off the pans. Your best bet is to replace them. I tried everything to clean mine over the years, and finally gave up. That Magic grease bullet thing on TV does not even work. Even plain old chocolate chip cookies leave an oily ring behind that never seems to go away.
Replace the cookie sheets and buy some parchment paper(NOT wax paper) or get a silicone baking mat. I have been using parchment on my new sheets for two years, and after very heavy use, they still look fresh from the store. Parchment also allows you to transfer whole pans of cookies to a cooling rack without squishing them with a spatula.

Then you can throw away the paper and you don't even need to clean the pan! I love it!

Could try this - To remove baked on grease after cooking, place a fabric softener sheet - like bounce. - into the pan with a bit of water. Soak over nite and voila! The next morning wipe with the sheet and it all comes off with no scrubbing.

I would try the Oxy Clean stuff....or I have used a paste of cream of tartar and white vinegar to clean baked-on stuff from my stove top...not sure how that would work on Teflon, but worth a try!

Take a small piece of paper towel, put some crisco on it and rub it on the cookie sheet.
