Everytime I go eat at a local chinese restaurant from any place, ANYWHERE, I always wondered. The chicken in their entrees don't look anything like chicken meat. Why is their 'chicken' so soft and weird, smooth shapes?

Sometimes the chicken is marinated in mirin before hand a sort of saki which gives it a smooth shape, plus the chicken is normally thigh meat.

Unless of course they are breeding very quiet dogs and slaughtering them behind our backs and managing to dispose of the skin and bones without anyone noticing!!!!!

Dog is much more expencive here, and chicken there. If you have any questions on the meat just ask if you can go in back and take a look around, then they should say YES or not understand you. In that case just go back there flashing your ID card saying inspector gadget.

No there is no chicken in the chinese food. Ussualy chinese food is made out of dog meat.
