Usually when you refer to somebody has having "let himself go" it tends to mean that the person has abandoned self control, or self discipline He let himself go and doesn't bother to dress well or neatly. Let himself go and abandoned control over what and how much he eats. You can let yourself go behaviourally, and have developed a "what the heck" attitude about the way you talk to, and interract with other people.
I would say the opposite description would be to say that a person was "disciplined" "focussed" "self-respecting" I have even heard a person described as "well structured" which I think fits, because it defines a kind of behaviour where the person has a good sense of what to do, how to do it, and how to present h imself to others at all times.

Well, say that they lost the weight to an extremetity such as becoming anorexic and stick thin. At that point I would continue to say "they let themselves go" because they put their minds into autopilot of their extremist behavior.

Letting yourself go could also mean- go wild.
Taking control might be the opposite- wether or not someone neglects their own well being or if they just went wild.

Well, firstly the phrase is "to let yourself go", and not this baby talk that you adopt.
Perhaps you think it's cool?
Secondly, the opposite would be "to keep it to yourself".
