There have been several. One of the biggest disappointments of my life was Star Wars Phantom Menace. Everyone in my generation was raised on Star Wars. We all played with the toys as children. We had been waiting for literally 20 years for a new Star Wars movie. Lucas kept pushing back the dates. We never thought it would be made. Finally it was.....and we were excited. And it was awful. The story stunk. The acting stunk. Even the good actors were terrible in it (it looked like Liam just didn't give a damn). It was so bad it made me like the original series less. He ruined the force with those cell things.
Another two that really left me disappointed were Eyes Wide Shut and AI. They were Kubrick's last films. Kubrick is among the best directors to ever work, and I was excited. Good casts....stories sounded good....and then they stunk. Especially Eyes Wide Shut. What a bore fest. Not even the gratuitous nudity was interesting. He managed to make an orgy scene boring.

Predator 2.
I loved the 1st Predator and thought that the 2nd (even if it suffered from sequel-sickness) would be decent. I haven't ever really had the chance to see it and always missed it when it came on Tv but I saw it on Thursday and was a little disappointed that it wasn't more entertaining.

This has been years ago.
"Robin Hood: Prince of Thieves" was hyped as this great adventure/lovestory and came right after Kevin Costner's big hit with "Field of Dreams".
It was one of the more horrible movie experiences ever.
More recently...
"Sky Captain" had a stellar cast and gorgeous "retro-looking" computer imagery. The story needed about 3 more rewrites to match the quality of the other elements.
