There are 194 countries in the world today.

Unless you don't count Taiwan.

Taiwan is not considered an official country by many, which would bring the count down to 193 countries. Although Taiwan operates as an independent country, many countries (including the U.S.) do not officially recognize it as one. Because the People's Republic of China considers Taiwan a breakaway province of China, countries who wish to maintain diplomatic relations with China have had to sever their formal relations with Taiwan (more than 100 countries, however, have unofficial relations with Taiwan).

The United Nations recognises 193 countries. 192 of these are its members, plus the Vatican City.

Do you mean the word "country" as synonymous with "sovereign state," as one may often find in colloquial usage? Depending on how you define “country” the list could grow to as high as 243.

There are 203 sovereign states in the world.

192 are member states of the United Nations (UN).

That leaves 11 “countries” that you will have to decied upon. However, that are nonetheless defined as states in the body of customary international law, drawing on the precedent of the Montevideo Convention.

Republic of China (commonly referred to as Taiwan).
Sahrawi Arab Democratic Republic in Western Sahara.
State of Palestine
Turkish Republic of Northern Cyprus
Abkhazia (on the eastern coast of the Black Sea)
Nagorno-Karabakh (in the South Caucasus)
Pridnestrovie (in eastern Europe)
Somaliland (in the Horn of Africa)
South Ossetia (in the South Caucasus)
Autonomous Monastic State of the Holy Mountain (southern end of the Balkan peninsula)

Not included in the above 203, and offered for you to consider:

Tibet (Tibetan Government in Exile)

Sovereign Military Order of Malta (SMOM), has diplomatic/official relations with over 100 states/entities.
