fastest production bike, as in street bike would be the hayabusa, and it will remain the fastest stock bike. There is a law or a restriction that was passed after the production of the hayabusa, because a couple of companies were competeing to make the fastest stick street bike, suzuki got lucky and the law or restricion was passed soon after their bike went into production.

I think the fastest production bike strictly speaking is the Y2K, it has 300bhp & 425 ft/lbs of torque, top speed of 227mph. It is the bike that the Guiness book of records awarded "Most Powerful Motorcycle Ever to Enter Series Production" and the "Most Expensive Production Motorcycle".

I agree with Uncle Fester, what he calls the Y2K, which I usually here called the MTT Turbine Cycle, see his link. I think the specs are a little under-rated, from what I've heard. You can have unlimited horesepower , but if you are affraid to twist the wick, What good is it ?
