Ether a head gasket or a cracked head.
Somewhere coolant is leaking into the combustion chamber.
A sign of a blown head gasket can be white smoke coming out of the exhaust, the heat gage reading high than low or the heater blowing hot air than cold air.
These trucks are also nitrous for leaking intake manifold gaskets(leaking coolant into crankcase and corners of the intake).
To be sure have a leak-down test done on each cylinder(air blown into each cyl. through spark plug holes w/ both valves closed) and a pressure gage on radiator and if gage goes up there is ether a blown head gasket or cracked head.
The fix would be to remove heads and have them checked for being warped and or cracks and repair as necessary.

white smoke is a head gasket. you can tell which side is bad by pulling the spark plugs out and see which ones are wet with coolant. but if one side is bad you should just replace both anyway. you have to pull the intake manifold to remove one head, you may as well pull the other off while you have it down that far. you will need to take both heads to a machine shop and have them check the mating surfaces for flatness, and re machine them as necessary, so the new gaskets will seal. if you plan to keep the truck, get a valve job, and replace the guides and stem seals while they are off. if you can do it yourself it will run about 300 for the parts and machine work. you can easily do this in a weekend. if you take it somewhere, about 1200-2000 for the job.
i just read the post above me, you do not need a rebuild kit. if the truck was running good before thid happened you will not be taking it apart that far. you will only be removing the cylinder heads. a rebuild kit is for replacing the rings, and bearings. you have to pull the motor out to rebuild. you leave the motor in the truck for a head gasket replacement.

Sounds like a leaking head gasket. The 350 is an inexpensive and easy engine to repair. Go to your mechanic shop and get a quote for the repair. If you got the tools and at least a little know-how, get yourself a Haynes manual, free up a weekend, and Monday morning you should be good to go. You could even get a rebuild kit for your motor, since you've got it apart, might as well rebuild it while you're in there. But sometimes it's just easier to pay someone to fix it.

If the radiator wasn't holding any anti freeze my best guess is that it's got a leak or it's totally empty that's why it took a lot and you think it's not filling up. Put some and then look underneath for leaks if nothing, fill it up, fifty fifty. Why your car was smoking? My best guess is that it's overheating with the lack of coolant or not correct level of oil. Fix your coolant problem and then have your oil changed, if your car still smokes it's got to be something else. It couldn't be the coolant going into the engine because the coolant has it's own strategic passage way inside the engine. If this thing ever happened, your car is done.

Dude it sounds like you either have a blown head gasket or bad freeze plug or maybe even a cracked block. Is there any water in your oil? look for milky looking fluid under your oil filler cap and on your dip stick as there may be a sign there. My noney is on the blown head gasket. Good luck.
