Red and green were the colors used in the pagan holiday Yule, when the christians were trying to convert the pagans they adopted certain holidays to make the transition easier. Green stands for the forest or the horned one, where red, I believe stands for the goddess. Santa...I can't totally help you with, he was adopted from Norse religions, where there is a good santa and a bad santa lol. The bad one is known as the christmas Krampus

Santa used to have many different colours until the Coca Cola bought the rights to use him in their ads:

Because it would look stupid with Santa being Red and Green. The white trim makes him stick out with that little glow to him.
Besides some people have white Christmas trees.
