Keep all of your vital papers such as birth certificates, marriage license and social security cards, homeowners insurance policy, and important phone numbers in an album in a safe place, along with your album of pictures you cannot replace. Keep your bonds in a vault, or stocks so they are not an issue. Grab the albums as you run out the door as you will need them to apply for any benefits you need.

I'm in flats, so I don't have too much stuff, but if my block burnt down I would rescue my Bible and my bass guitar. The first on e is because my faith means a lot to me, the second one because I am a bassist and love my guitar.

Hyperthetically speaking, I'd save my DJ equipment (which I would count as one thing) and my record collection. Although, realistically I'd probably never have enough time to get them out as they'd be bloody heavy, but I'd still do it or die trying.

Some clothes, a blanket preferably, to keep yourself warm, (its pretty hard. surviving a fire, but dying of cold.)
and some food. not too much.
