Some of the designs press into the mattress so that the mattress will have a different feel to it when you are laying on it. And when people are purchasing lots of mattresses to bring to their store etc., they would like to see the mattresses...without sheets.

Many reasons
The patterns help strengthen the cloth. A solid cover with linear threads is more likely to wear, tear, stretch, sag, snag, or run than a randomized pattern which divides stresses in curves and arcs.
It allows for a thicker cover.
Nowadays covers are padded and so that padding stays in place without shifting or bunching it needs to be compartmentalized.
Mattress will get stained and worn in some way during its lifetime. (And I'm not talking about accidents, but normal stuff like floor dust when it is flipped, sweat, humidity, bleeding dye, time, fading, etc...) The patterns help hide all that and keep the mattress from looking old sooner.
Plus they look better for sale, and don't look worn right away in the showroom..

exciting question. not sure the place you're figuring out to purchase, yet maximum mattresses have not got designs on them, by way of fact they prepare during the sheets and seem cluttered. the main conventional protecting is an ivory fabric, with neither trend nor layout. some inexpensive mattresses are coated in ticking, and for some reason, those in many situations seem single mattress mattresses. Doubles, queens and kings are not often coated with patterned fabric.

I've actually been mattress shopping lately. I went to a particular store where they made their own and they had some really ugly mattresses. It really kinda turned me off to even wanting to look at them.
Even if they are covered up, they have to sell them. To sell, they have to be pleasing to the eye uncovered.

I have noticed that the patterns are disappearing, and the majority of mattresses are white now...they used to come in some very hideous designs. Maybe they thought it made it more attractive to the consumer or something.

in case you are washing your sheets, don't have another set, and want to look at your matress all day, maybe lie down on the pretty designs
