Opposum.....possum......marsuprial.........yawn.
Well for starters anything by "Asleep At The Wheel" with the operative word being "Asleep" as in playing possum.
Personally I like possums with candied sweet potatoes and lots of honey. Cook them in a deep drip pan cause they got lots of grease If you don't care for the Sweet Taters......then soak the possum in red pepper vinegar over night. Then bake it in a deep drip pan stuffed with red onions, bell peppers and red potatoes.
