I don't know about the parts that are 1 hit instant paralysis, but from medical science you can tell which major blood veins can be pressed to stop blood flow and numb the other person, though it's not instantaneous.

When I was a Boy Scout we learned First Aid to help people who were bleeding. These pressure points were between the bleeding and the heart and were where you could feel a pulse (artery) crossing a bone. Pressure there would reduce blood flow to the injury.

What you are asking for is highly dangerous, irresponsible, and probably illegal

I will not provide the crucial points to imobilize another person since you are not trained to do so. A wrong hit can cause permanent damage. Therefore, consider taking martial art classes and you will learn what points are necessary and how to control the strike.
