I'm thinking about buying star wars galaxies, but I was wondering if anyonje knew if you can play the game offline as well as online

Nope. You can't play offline. The game isn't even all that great online though (it was ruined by the latest expansion pack, and most of the people on there now are rude and obnoxious). If you are looking for an MMORPG, I would suggest World of Warcraft.
WoW is the only MMO that I have played that has remained somewhat intact since it's creation. Sadly, SW Galaxies, which was a better game than WoW at first, has just gotten worse and worse.
SW Galaxies is just filled with people that started just a month ago, and think they are better than everyone, including people who have played since the beginning. All of my friends have given up on the game, and I don't think it can ever be restored.

you cannot play off line, it is an online world, i havent played in about a year and some change, but it was going down hill when i left. I think i still consider Coronet my home though,
