Surround yourself with interesting people and situations, read, explore new scenes, take classes at the local college, avoid TV. I once read that it takes more brain power to sleep than it does to watch TV!

Crosswords, sudoku, some board games (scrabble, trivial pursuit, etc).Also, learning a foreign language is a great way to stimulate your mind.
