I'm flying into Varadero on a Sunday night, with my flight getting in at around 10 pm, and need to get cash right away as we're staying at a casa particular and will need to take a taxi.

Are their currency exchange booths that are open long hours, or ATMs, in the airport?

Varadero is an International Airport , there are money exchange booths, however if by any chance there is no way of changing money , you can still use USD is not prohibited it's just that the fee would be a litle higher.

At 10 pm ,oh brother i would not come out till daybreak , stay in airport or have a body guard with you , thats like coming out in New Yorks barrio @ 9pm . good luck you will need it .que dios te acompane .
