I think, "Unchained Melody," is the most romantic song. As far as instrumentals go - this isn't an instrumental, but Andy Williams CD's are great background and romantic dance music.

I'm not sure why you posted this under "biology". Music largely comes down to subjective tastes. Some of the songs I find to be incredibly romantic are going to sound bad to somebody else and vice versa, especially for people who like completely different genres of music. On top of that, people have different ideas of what "romance" means to them, and lyrics that sound romantic to one person might sound creepy or whiney to somebody else.
Scientifically, I suppose there are a few constants though. People largely react to certain chords and timbres in certain ways. I recommend learning about the physics of sound, especially the overtone series and how that makes some chords sound "happy" and others sound "serious".
Having said that...I'm very partial to "Beginnings" by Chicago. And a lot of their other songs, come to think of it. Ditto for Journey. For instrumentals, I love those lush 50s exotica songs from artists like Martin Denny or Les Baxter.
The funny thing I've noticed about "love" songs is that I usually find the lyrics to be predictable and never think much about them, UNTIL I suddenly find myself in a situation with somebody (just starting a relationship, going through a rough break-up, having a hard time expressing myself, etc.). Then suddenly I'll hear a song that describes exactly what's going on, and it sounds genius.

Any slow style country music is easy to dance to, even some of the pop music out today. Music from some musicals works well too, such as "Baby Talk to Me" from "Bye Bye Birdie." Usually these types of songs fit the occasion well. Try looking up some of Rascall Flatts music or A Moment Like This (Kelly Clarkson).
Do a search for a country music site, and you can find descriptions of music, the same for pop. For good musical songs, try doing a search on musicals the person you are sharing the night with likes.

The theme to Armagedon song i dont want to miss a thing isnt bad but be carefull listen to the lyrics as a lot of slow song today are about the break up not the falling in love bit try some of the platters nice words in their or the carpenters weve only just begun anyway happy romancing
