Well, they are leaving Middle Earth because it is the "time of Man". "The time of Elves and Dwarves has past". In fact in the last battle the dwarves are hardly even there. They are not immortal. Maybe the UnDying Lands is Heaven? The rings were worn by Frodo and Bilbo, and carried by Sam and Gandalf, so they have aged slowly like the elves and dwarves. They don't want to witness all of their friends dying perhaps. In the Epilogue: Sam stays and has a family, but when his wife dies when he's very old, Sam leaves to go be with Frodo across the pond (eh...USA?). Sam carried the ring, so he's aging slowly too. I think that this is why Bilbo leaves early in the trilogy to live with the elves, he's tired of watching his relatives die off. Pip and Merry live very long lives and eventually die after reproducing many more annoying Tooks.
Part of the attraction to leaving is that the characters are immortal, you never know when they do die. Therefore, their spirit lives on, even for the atheists in the crowd.
Also I think that there is direct coorelation in a historical context to WWII era England (elves) and the USA(humans). Is he saying that British imperialism is over (the empire in post WWII) and the time of America is at hand in the nuclear age? The connection between the Sauron and the Nazis under Hitler could be made too. For instance when Sauron is defeated the first time (in flashback) is when Germany lost World War 1 (Hitler was a corporal and fought in WW1)? The Dwarves would then be France, absent from the main part of WWII after 1940? Just some thoughts.

I believe you're right; and if you read the books, you'll find out that eventually the Elves, Frodo, and Gandalph aren't the only ones who go.

I was always under the impression that they just left to see and travel the rest of the world. Frodo says that he wants to continue on the adventure as Bilbo started.

the book explains it alot better. The eleves go to a mysth island shut away from the world of man. Frodo dosn't go with them but bilbo does to go die.
