Americans tell Polish jokes, the English tell Irish jokes, everyone tells blonde jokes, and they are all the same jokes, just with a different target.

Ethnic jokes aren't limited to the Poles. There are jokes making fun of every group you could possibly name. Most are so generic you could insert another minority and get the same effect. Years ago I had relatives in St. Louis Missouri and Kalamazoo Michigan. In St. Louis they told Polish jokes, in Kalamazoo they told Dutch jokes, and they were the same damned jokes. They just switched ethnicities. All this has reminded me of a joke I heard explaining why there were so many Polish jokes. The Poles and Italians, both tired of being the butts of so many jokes, decided to play a football game to settle the issue. The loser would be the butt of all future jokes. Halfway through the game a train went by the field where they were playing and blew its whistle. The Poles thought the game was over, and went home. Six plays later, the Italians scored!

Do a search on Youtube and Google for: "Polish jokes origin is Nazi German propaganda".
These articles do a good job explaining the Nazi German origin of so called "Polish jokes". Before Hollywood and the Leftist TV networks RENAMED them as "Polish jokes"......they were known in Europe as Nazi subhuman intelligence hate jokes about Polish people which is why people didn't tell them. So Hollywood in the 1960's made sure not to tell the American public about the Nazi origin of these anti-Polish jokes so that Hollywood could degrade Polish people to the American public.

You know our family does have Polish in us!! We actually have alot of different nationalities in us...... Mainly German, English, Checoslovakian, Polish with a tad Irish, .......So, we just tell everyone we're Heinz 57s!!HaHa Because we're so mixed!! Anyway, if you think about it, there's Jokes for every Nationality!! white's, black's, mexican's, Jewish, Polish, Irish, you name it, there's usually jokes for all walks of life!!! If you ever take it personal, then you need to somehow get some type of "Sense of Humor" going on, you know...... You have to let it just roll over, if you ever feel like a joke is directed to you, because of your Nationality, or the like, you know!!! Smile!!!

The reason for Polish jokes is really very simple. First, Poland. has few natural geographic barriers which make it difficult to defend. It is located on the Northern European plain between Russia and Germany, which places it on the most natural invasion route between Western Europe and the east. Caught between powers, Poland is fairly easily, and often conquered.
Second, until the Holocaust Poland had the highest Jewish population in Europe. The combination of antisemitism and an almost indefensible, and thus oft occupied country made the Poles a natural butt for jokes. Add the usual cultural differences of new immigrants and you have reality enough to support these jokes.

Polish people are NOT stupid!!! Both of my parents are partly Polish, and they both went to very good colleges and both got their Master's degree (my dad also got his Ph.D). As for why you make Polish jokes, I have no idea.
