Well how much are you willing to spend and does it have to be goldfish?

For my sf experiment, I tested if crickets have a prefeence for the color of light in their enviornment, you could do this with fish. If you could get a large aquarium, or even a rubbermaid, and use aquarium sicicone to put black plastic dividers, but leave enough space under that fish can go under. Put different colors of plastic over each section that light will go through, and do it on the sides to so no clean light gets in. THen every day count how many are in each color enviornment
You couldnt do this with goldfish thought because it requires quite a fe w and goldfish get huge, if you can get a heater use white clouds.

Goldfish are very fragile. Even messing with some kind of test in its water could kill it. Try another experiment that doesn't involve a pet, unless you don't mind ANY side effects.

goldfish memory. put it in a tank maze with food at a spot. keep the food int he spot every time. do it many times to see if he remembers where it is.

goldfish don't actually have a 3 second memory, it was proven doing a test like this, you can try your own version of it.

you could do an underwater maze and see what kinds of gold fish food attract the fish faster.
