My favorite method that I learned in Germany is to bake the potatoes and then when they have cooled enough you can easily peel them. After that you cut them into slices (should be a relatively starchy potato so they don't crumble) and pan fry them with your favorite spices (heavy cast iron pan is best but any will do). Not necessary but if you want you can use a little oil ( or even better if you just cooked brats in the same pan). You would cook them on medium to medium-high and let them brown and then flip them and brown em on the other side.....

Never boil vegetables, unless you're making soup. Boiling leeches out the vitamins. Although boiled potatoes are nice. Yum.
I usually grill carrots if I cook them at all.

i like to boil them and them mash them together. you can also ad other root vegetables if you like. tastes great.
