With carrots it is a matter of the sweetness.
Potatoes will vary by type more than by cooking method, but
cooking method does effect the taste too, whether you get a mouth full of tasteless starch, or a somewhat nut-like and delicate flavor.

Both are very versatile and aide digestion. Carrots especially are healthy. Lately I've been adding grated carrots to everything and the taste and color they add is wonderful, plus the health benefits. Potatoes are a staple of cooking. Whether baked, mashed, or just cut up and boiled and served sprinkled with dill, parsley, and black pepper, it is hard to go wrong with potatoes. As to whether their taste changes depending on the cooking method, carrots probably tend to lose good taste if cooked to long- i much prefer them lightly cooked or raw. And as I said they are really good grated in pasta salad and in any vegetable dish or even desert.

Yes baked in the oven carrots and potato,s taste completely different to what they do if only boiled.

I like potato. Theres mashed potato, scallopped potato, french fries, hashbrowns, fried potato, potato salad, potato au gratin, boiled potato, roast potato, garlic potato, cheese potato. Thats about it.... oh yea and raw potato.

yes if you cook them too long they will get soggy and when you bite them they'll have a smushy taste to them
