You're probably talking about flame scallops that are popular in the marine hobby. These are a shellfish, but not actually a scallop. They are a file clam. The shell is scallop-shaped and they have a bright red body (mantle) with either red or white tentacles. Supposedly, the lighter the color, the deeper in the water the clam lived. There's also a newer scallop on the market called an electric scallop. It has the same description as above, but in dim light/dark you can see electrical discharges (blue-colored) across the mantle.

The scallops are very pretty, but very hard to keep alive. They are filter-feeders, so you need to feed small particle food frequently (which creates problems with your water quality), plus they will move around in your tank - usually to some back corner behind/under a rock where you'll never see them. Scallops are bivalve molluscs (related to clams, oysters etc.). They live in the sea and therefore need to live in a marine aquarium if in captivity. They are interesting to watch as they swim by clapping their shells together. Beautiful creatures when looked at in detail, not just the shells but the soft parts too.
