A mathematical function is any algebraic relation where each value of input (usually shown as x) corresponds to only one value of output (usually shown as y). Therefore:
y = -5x+5
is already a function: each value of x will produce one value of y.
Sometimes the fact that the output is a function of the input means the expression is written as:
f(x) = -5x+5

This is a function. The only other way that I could think of you stating it is

f(x)= -5x+5

Just replace y with f(x)
f(x) = -5x + 5

You could take out the common factor of 5
f(x) = 5(-x + 1)
