What I was told once was that the funny green color is the opposite color to the red color of blood. If you stare at a certain color for a while, and then look at something white, you will notice ghost images of the opposite color. Your color vision temporarily adapts to the color you have staring at. In surgery then, the color being stared at is the bright red blood, so the ghost images are green. Apparently these green ghost images are quite distracting, but if others are wearing the green color, then the effect is much less noticeable.

WildOtter is correct ... the reason is something called "afterimages" (Google it for more information).

When you stare for a long amount of time at something bright red, and then look up, you will see a green afterimage. This would be ver distracting if everyone was wearing, say, white scrubs. By having surrounding in green, the green afterimage is less noticeable and less distracting.
