I can't buy the land surrounding mine, so i'd like to make my land as high as possible - let's say 2000 cubic acres?

This is actually a very good question. Property ownership stops at the surface of your land. No one can own the atmosphere. The government can resrict airspace, but that's it. And unless you have specific title to mining rights for your land, you don't own what's underneath it either. So all you're left with is a skin. Scary.
Also, naturally flowing water courses, like a creek or river can't be owned. You can't legally fence a creek on your property. Anyone can float their boat right through it.

There is no restriction Allot of indoor walls have restrictions, and police may get you down if it's soeones property, but there's nothing to stop you climbing some cliff in the wild- I do it quite a bit, called free soloing.

building the wall to hold it in would be a bit expensive, and take a lot of your land up.
