Is Google going to continue to increase the memory of Gmail?

It seems that it has slowed or stopped...my account has remained showing a maximum of 2807 MB for the past few weeks? I LOVE Gmail so am hoping they will continue to increase...?

Yes, it's slowly but always increasing - it's just that there's so much storage already that the slow increase isn't totally noticable.
