Body, so starved of nutrients, gets rid of everything that it doesn't immediately need so it can maintain the most important functions.
Hair is expendable, so the body will take the nutrients from the hair roots, which will die away and the hair will fall out.
The same happens with women losing their period - the body can't afford to loose all that blood. It assumes that there is not enough food, so procreation is a function that isn't important right now. Instead, all the nutrients get used to maintain necessary life functions like breathing, eyesight, moving around etc.

Because your body needs those nutrions to grow strong hair. Whenever I had aneroxia though I got fine hair everywhere like a newborn baby has.

There just is not enough nutrients in the body to sustain the hair. There are more important things the body needs to do, such as keeping the heart beating! As such, the body will stop sending nutrients to non-vital parts of the body to conserve.

Because people with Anorexia are not providing their body with nutrients. Lack of nutrients will result in failure of organs and growth. Since the nutrient required for hair growth is not present, hair will fall out.
