This response is called classical conditioning. An animal's reflexes are trained to respond to a stimulus (something in the environment to which an animal reacts). When we call our dogs over we usually pet them or feed them when they come. Knowing that they will receive something good for coming, they will get used to responding to your command..........<(^_^)>

The concept of you scratch my back, i scratch yours. Like you and I dogs hear, see, smell, taste and feel. So say you enjoy riding your bike, and your father tells you if you clean the garage, you may ride your bike. So you clean the garage and now you can ride your bike.
You then experience pleasure at riding your bike.
Dogs on the other hand do not understand these things but we can teach them to do things we want them to by giving them certain pleasures. Such as the promise of a treat or a scratch behind the ear. So if you repeatedly put your dog in the down position and say down at teh same time, eventually it will stick and mean to go into that position because of the promise of pleasure.

It is a form of conditioning. They dogs associate the command with the reward that they get for obeying it, and so they learn.

Dogs are social animals, accustomed to surviving by living in packs and deriving the benefits of group membership. They probably see us humans as pack leaders (although not very bright ones, from a doggy perspective) or at least pack members. That, plus the fact that we deliver food to their plates, might expalins why they listen to us.
